This exceptional mild whitefish is very versatile and provides a consistent quality product that is available year round.

THE FARM ENVIRONMENT
Our Farm does not use chemical fertilizers, pesticides, growth hormones, or antibiotics during production.  The feed is a specially formulated mix of wheat, soy, fishmeal, vitamins and minerals.


 

The American Heart Association and the American Dietetic Association both recommend eating seafood at least twice a week. 

Tilapia A lean, protein-packed entree choice with just 110 calories, 2 grams of fat and about 45% of the recommended daily amount of protein per 3 oz. serving. * 

Mild in taste, Tilapia can be grilled, poached, broiled or blackened.  We suggest using it for fish tacos.

*  Recommended FDA nutrient Daily Values and USDA food amounts based on a 2,000 calorie diet.

Having developed sustainable domestic caviar that rivals some of the best imported product, Tsar Nicoulai is a pioneer of sturgeon farming that is ecologically and responsibly produced.


Kendall Farms Crème Fraîche
It requires no reduction and is ready-made Bechamel. Add reduced white stock and it is Veloute. Egg yolks added to Kendall Farms Crème Fraîche Veloute becomes Sauce Allemande. Brown stock flavored with mirepoix and tomato combined with Kendall Farms Crème Fraîche is Sauce Espagnole. 
 

Petaluma Poultry Rocky Junior Chicken
Petaluma Poultry Rocky Junior chickens are an extremely high quality, free range chicken. Rocky Juniors are a young bird, weighing 3.5 pounds on average, and are sustainably farmed in Sonoma and Marin county. Raised without growth promoters or antibiotics, Rocky Juniors are fed a completely vegetarian diet free of animal fats and animal by-products for exceptional flavor.
